Strawberry Coconut Bread

The Daring Bakers’ February 2012 host was – Lis! Lisa stepped in last minute and challenged us to create a quick bread we could call our own. She supplied us with a base recipe and shared some recipes she loves from various websites and encouraged us to build upon them and create new flavor profiles.

I had some Strawberries in the freezer that were falling out, so I grabbed them and combined them with Coconut to churn out this lovely bread. It was so yummy- crunchy on the outside and moist on the inside. Slathered in butter, who could go wrong?! :) It was reminiscent of summer and berry picking in the fields. Hopefully this year's is more friendly to the berry crop and produces a glut of fruit! I'm so looking forward to that!

I was a bit confused at what the definition of "quick bread" was, but in the end, I made this and decided that the Walnut Choco chip muffins also qualified... so yummy :)

    1. Just saw your Post for the challenge- Did Banana's come down from their $13/kg price? My mum ( living in Newcastle, NSW) laments not being able to make Banana Bread because of the price! All of your breads looked GREAT.

  4. YUM - coconut and strawberry sounds like a delicious, tropical combination, and I dare say it might have tasted a bit like vacation on a plate! :) Wonderful job on the challenge!
